The juice is chosen for its vibrant acid structure, which forms the backbone of this exceptional wine. It is fermented using neutral yeast to preserve the pure character of the fruit.

After fermentation, a small amount of Semillon is added to enhance the length and complexity of the palate, ensuring a smooth and well-rounded finish. A touch of sugar is introduced to achieve perfect balance, before the base is carbonated and bottled, creating a delicate effervescence that dances on the tongue.
